Peru Squid
The total amino acid and ∑EAA/∑AA of Peruvian squid were higher than those of Japanese sea squid, and according to the amino acid scoring standard model recommended by FAO/WHO, both belonged to high-quality protein. The amino acid with the highest content in the two squid was glutamic acid. According to the AAS model, although the essential amino acid index of the two squid was different, they were all greater than 0.5, indicating that the squid carcass was rich in nutrients and met the human body's requirement for amino acids. Peruvian squid contains 10 kinds of unsaturated fatty acids, and Japanese sea squid contains 7 kinds. Compared with other seafood, squid has higher DHA content and rich nutrition, and is a high-quality seafood with high development prospects.
