What Is The Saury?
The Pacific saury (Cololabis Saira) widely spreaded in the Eastern Pacific in the surface waters. But lower catches and a newly extended fishing season have raised concerns about declining fish stocks.
It is a fish with a small mouth, an elongated body, a series of small finlets between the dorsal and anal fins, and a small forked tail. The color of the fish is dark green to blue on the dorsal surface, silvery below, and there are small, bright blue blotches distributed randomly on the sides. Saury, which is a food source in some East Asian cuisines, is also known by the name mackerel pike.
What is application for Saury?
Although it is not actually a mackerel, Saury looks and tastes like mackerel. It can be found in the North Pacific and has a mild flavor compared to most mackerels. In Japanese and Korean cuisines, it is popular to salt and grill the fish, and serve it with condiments. It is also used in sushi being lightly salted and pickled and serving with sushi rice. Mackerel Pike can be grilled, steamed, braised or baked and is often topped with grated daikon and soy sauce for better flavor.


Processing and Packing
Almost the pacific saury is frozen on the vessel. Normally China saury is from Taiwan fishing boat and China fishing boat. The carton is unfixed weight.
The pacific saury caught in winter is usually better with more fat and no wormhole.
