Yellowtail, also known as lionfish, is a warm-water fish of the genus Leo, subfamily Leoninae, family Perciformes. It is primarily found in the Sea of ​​Japan and the vast waters south of Taiwan. This fish grows most rapidly in water temperatures between 20°C and 30°C. Its growth stagnates when the water temperature drops below 15°C; once the water temperature drops below 10°C, the yellowtail cannot survive.

 

Yellowtail lionfish are also quite sensitive to changes in salinity, with their optimum salinity range being between 16‰ and 34‰, and their most ideal salinity being between 20‰ and 25‰. It is worth noting that yellowtail lionfish exhibit strong adaptability in high-salinity environments, but are more vulnerable in low-salinity environments, unable to survive once salinity drops below 16%.

A Premium Ingredient

Yellowtail, a medium-sized marine fish, is known for its distinctive appearance-black eyes and a yellow band running from head to tail. Its sweet, rich, and creamy flesh melts on the tongue, making it a top-tier ingredient in Japanese cuisine. However, this delicacy is not commonly found in Chinese markets and can be difficult to find online.

 

Yellowtail not only tastes delicious but is also known as a nutritional treasure trove. Its rich DHA (docosahexaenoic acid) is crucial for brain nutrition. It effectively prevents cholesterol from depositing on blood vessel walls, providing strong support for preventing or alleviating atherosclerosis and coronary heart disease.

 

It's worth noting that since the 1980s, Hainan fishermen have been catching wild yellowtail fry after the Mid-Autumn Festival and raising them in cages. In April and May of the following year, when the fry grow to over 12 centimeters, they are exported to Japan, resulting in a significant annual export volume. In addition to Hainan, my country's Guangdong, Fujian, Shandong, and other provinces also export yellowtail fry or medium-sized fry to Japan.
