These are shrimp that have undergone primary processing - caught, hulled and waste removed, and then quick-frozen. Shrimp imports from Vietnam, India, Indonesia and other Asian countries account for 80% of the market. Black tiger shrimp species accounted for 30% of these (2014). Since the initial processing has already been done, these shrimp are very convenient, and they are used as an ingredient in various Japanese and Western dishes. (Note: As raw shrimp, these contain the umami compounds glutamate and inosine.)
