Dosidicus Gigas

An oceanic and neritic species occurs from the surface to 500 m depth. Dosidicus gigas is most abundant and largest in the South America, where adults are found in water between 26 and 28°C to much colder. Eastern Pacific. From south of Bering Strait to Gulf of Alaska, east to Gulf of California and south to Chile.

Application

Commercially, dosidicus gigas has been caught to serve the European community market (mainly Spain, Italy, France, and Ireland), Russia, China, Japan, Southeast Asia, and increasingly North and South American markets.

The big size is usually processed into Fillet, Wing, Neck, Tentacles and so on.

Small size can process into shredded squid, dried squid, etc.

Dosidicus gigas is one of the most caught squid in the world. Due to the huge size of the dosidicus gigas squid, its meat is thick, white, and strongly acidic. It cannot be eaten directly. It needs to be acid-removed.

Here China factory use a Europe chemical technique to neutralize the typical ammonia taste and odour, the chemical can lowering significantly the content of ammonium chloride. The technique is based on the use of phosphates and other chemical ingredients, all having food grade, which once dissolved in drinking water are used to remove ammonia, giving the product a soft texture and a delicious flavor, typical of squid.
