Instructions:
1. Clean the ironclad turtle thoroughly. Peel and dice the ginger, chop the scallions, and dice the red pepper.
2. Heat oil in a pan. When the oil is hot, add the ironclad turtle and pan-fry over low heat until both sides are cooked through. Add Shaoxing wine and then pour in chicken broth.
3. Bring to a boil over medium heat. Season with salt, MSG, pepper, light soy sauce, and oyster sauce. Simmer until cooked through. Thicken with cornstarch slurry. Sprinkle with chopped scallions, drizzle with sesame oil, and serve.
