Red Pomfret Appearance and Other Names

Despite its name, red pomfret isn't a true pomfret. Its scientific name is *Cyprinus shortcapus*, native to South America, making it an "outlier" among freshwater fish.

 

Aesthetically, this guy is quite the cool fellow, with a black dorsal fin and orange-red metallic ventral fins. Swimming like a lightning bolt, it's practically the "GT" of freshwater.

 

It's also known as freshwater white pomfret, but it's quite different from the more common silver or golden pomfret. Have you noticed the unique features of the red pomfret?

Nutritional Value of Red Pomfret

Red pomfret is not only beautiful to look at, but also incredibly nutritious. It's rich in protein, containing 15.6 grams per 100 grams – a great energy booster!

 

Furthermore, its fat is mostly unsaturated fatty acids, which are particularly beneficial for cardiovascular health, lowering cholesterol and protecting our blood vessels. It's practically an essential ingredient for a healthy diet.

Cooking Method for Red Pomfret

Steamed red pomfret is simple and delicious! First, clean the fish thoroughly, making sure to remove the black membrane. Then, drizzle with Shaoxing wine and let it sit for 30 minutes to remove any fishy smell.

 

Next, rub some salt on every part of the fish and let it sit for another 30 minutes. After marinating, rinse briefly and drain. Place ginger slices on a plate, then add the fish, drizzle with Shaoxing wine, and stuff with shredded ginger.

 

Once the water in the pot boils, steam the fish for 12 minutes. Turn off the heat and sprinkle with chopped green onions.

 

There are many ways to cook red pomfret; braising and pan-frying are also delicious. However, steaming best preserves its original flavor and nutrients.
