Many species of these crustaceans are found all over the world and have been loved since ancient times. It is an easy to use ingredient that is used heavily in many cuisines around the world, including France, China and Thailand. Shrimp and prawns contain an amino acid called glycine, which combines with glutamate and inosine to create a unique umami flavor. Southeast Asia has many fermented seasonings made from shrimp and prawns, all of which are rich in umami.
