Frozen Finletted Mackerel

   The finletted mackerel is a laterally compressed, spindle-shaped fish, also known as hardtail mackerel. The area around its mouth is deep black, with only the tongue and the roof of the mouth being milky white. Its body is brown or dark brown; the dorsal and anal fins are dark or black, sometimes with light-colored edges; and the caudal fin is dark yellow. It is distributed in the East China Sea, South China Sea, and the Taiwan Strait.

Instructions:
1. Clean the armored catfish thoroughly. Peel and dice the ginger, finely chop the scallions, and dice the red chili pepper.
2. Heat oil in a pan. When the oil is hot, add the armored catfish and pan-fry over low heat until both sides are cooked through. Add Shaoxing wine and pour in the broth.
3. Bring to a boil over medium heat. Season with salt, MSG, white pepper, and soy sauce. Sprinkle with chopped scallions, drizzle with sesame oil, and serve on a plate.
