Mussels and scallops are two common Marine shellfish, and there are significant differences between them in appearance and consumption. The shells of mussels are long and oval-shaped, with a smooth surface and are mostly dark blue or dark brown in color. They are fixed to reefs or other hard substrates by foot filaments and are typical fixers. The shell of a scallop is fan-shaped, with wavy folds along the edges and radiating rib patterns on the shell surface. They rely on well-developed adductor muscles to achieve water propulsion and can move over short distances.
In terms of edible value, mussels have firm flesh and rich flavor, with distinct Marine umami characteristics. Its protein content is approximately 14%, and it is rich in minerals such as iron and zinc. The mussel as a whole is edible. Scallops are most highly regarded for their well-developed adductor muscles, which offer a tender, smooth and slightly sweet texture. Scallops have a higher protein content and are rich in Omega-3 fatty acids. Usually, only the adductor muscle and the genital area are consumed, and the black visceral mass needs to be removed. In terms of cooking characteristics, mussels have a relatively tough texture and are suitable for longer cooking times. Common cooking methods include stewing them in white wine and steaming them with minced garlic. Scallop meat is tender and delicate. Overheating can cause the texture to become hard. Therefore, quick cooking methods are often used, such as sashimi, pan-frying or short steaming. Mussels have a strong flavor and are suitable for pairing with heavy-flavored seasonings. Scallops are more suitable for light cooking methods that highlight their original flavor.
These two types of shellfish also have their own characteristics in terms of nutritional composition. Mussels are a good source of vitamin B12 and are beneficial to the health of the nervous system. Scallops are rich in selenium and have antioxidant effects.
