In the aquatic products industry, IQF and BQF are very common product processing technologies. So, what are the differences between them?

IQF is the abbreviation of individual quick frozen, also known as single freezing. It uses freezing technology to freeze food one by one and rapidly at a temperature of -30℃-40℃. It is carried out in three stages. The first is preprocess. Before freezing, the products need to undergo preprocesses such as cleaning or cutting processing first. This procedure ensures the quality of the product at the very initial stage and may even slightly extend the shelf life. The second step is to start processing. The product will be placed on the conveyor belt and sent to the freezing area. Generally, the freezing area usually uses liquid nitrogen or carbon dioxide for freezing. The freezing zones of different devices vary.Ordinary freezing, due to the relatively slow freezing speed, will cause large ice crystals to form inside the food, which will result in a mushy texture. The freezing speed of IQF is extremely fast, having little impact on food, and it can well preserve the texture and flavor of food. After coming out of the freezing area, proceed to the third step, which is also the final step, to collect and package the individual items for storage.
BQF refers to block rapid freezing, which is also a method of quickly freezing products into solid blocks, aiming to minimize the damage to the taste and flavor of food caused by the formation of ice crystals during the freezing process. Compared with IQF, the advantage of BQF is that it is easier to store and transport.And it can handle a large quantity of products simultaneously. Its procedure is roughly the same as that of IQF. However, when organizing, products will be linked or overlapped with each other, and the speed is usually a little faster.
